Fruit was hand harvested from our estate vineyard. Pressed whole cluster straight to barrel. Fermented and aged without racking or stirring. Barrels used comprised 25% new oak, 50% 3rd-fill, 25% 4th-fill — all in 500L format. Racked from barrel in August after 10 months ageing. Racked once in tank prior to bottling September 8th. Bottled unfiltered and unfined with minimal sulphur added.
This wine shows aromas of sweet hay, bright lemon and ripe peaches followed by a zippy palate with beautiful weight and pure county acidity.
