The 2021 growing season was a beautiful season all the way through to September. The weather stayed warm throughout the fall, with heavy amounts of rain. The later ripening varieties struggled in the 2021 season, making this one of the most challenging vintages in Ontario. Pressed to barrel, fermented naturally and aged for 7 months on original lees. Racked out of barrel and bottled unfined and unfiltered with 50 ppm total sulphur.
A reductive wine that showcases more caramel, corn nuts and cloves initially. After decanting this wine starts to exhibit more classic viognier notes such as peaches and spring blossoms. An oily texture on the palate but a light, vibrant finish.
