This may just be the perfect field blend of organically-farmed Geisenheim, Gewürztraminer and Chardonnay from our vineyard. Still at a young stage, this will get drier and more effervescent over time.
Geisenheim and Gewurztraminer were picked at 15.9 Brix, hand-destemmed and fermented with light punchdowns for 10 days before pressing. Blended with foot-stomped Chardonnay picked at 19.6 Brix. About 2 weeks total skin contact. Fermented to dryness and bottled. Bottled with Riesling juice added for an aim of 3 bar pressure, and light, refreshing bubbles!
A tropical party with pear/grapefruit skin, peaches and papaya. Light with soft, minty bitterness and pithy tension running throughout. Exceptional, bright flavours. 100% wild ferment. Zero filtering. Zero added sulphurs.
This wine transports one from the December blues to the December tropics!
