A delicious way to up-cycle our lightly-pressed grape skins. We press our fruit very gently and so are left with juicier grape pommace than most. We add a bit of water to our pressed grape skins and ferment a second time, adding herb and botanical infusions sourced from our property — resulting in a refreshing, light, wine-like thing!
Cabernet Franc stems and skins from the Trail Estate vineyard were pressed for our Red Pét Nat. The pressings were mixed with water and punched down for 4 days prior to being pressed. An addition of Flor-aged verjus was made to increase acidity. This was then blended with filtered lees — making it one of our more wine-like Piquettes. Bottled with an aimed pressure of 1.5 bar.
Light green pepper and honey on the nose. Spritzy with high acidity and tannin. Flavours of sour cherry, sour patch kids and cranberry. Not your average Cabernet Franc by a long shot!
