A refreshing, light wine-like thing!
We press our fruit very gently and so are left with juicier grape pommace than most. We then add a bit of water to our pressed grape skins and ferment a second time, adding herb and botanical infusions sourced from our property — resulting in a spritzy, refreshing, wine-like beverage!
Our Chardonnay was pressed whole cluster for our Estate Chardonnay. The stems and skins were mixed with water and pressed to tank after 4 days. An addition of Flor-aged verjus was added in addition to Thyme and Peaches. Bottled with an aimed pressure of 1.5 bar.
Reductive initially with notes of peaches and fresh cut straw. Swirl the glass and you'll find the palate has an acidic backbone with a great lemony finish.
