It’s not all wine, right?! This is a project by Pier-Alexis Soulière, MS, that we’re happy to support! Deciding to apply the same philosophy to his family’s maple syrup as to wine: small batch, a sense of place and vintage differences!
“I had the chance to grow up in the World Maple Syrup Capital and my family has been producing it for generations. Unknowingly at the time, I was always exposed to a high level of quality only to realize later that what was available on the market was far away from what I was used to. In 2019, I founded P-A SOULIÈRE SÉLECTION LTÉE to share the taste of my childhood putting emphasis on place (my village Saint-Pierre-Baptiste), the original indigenous tree (Acer Saccharum) and of course the best sap flow day of the year.
CUVÉE ROGER 2022 is selected at the height of the season on the northern foothills of the Appalachians. We wait for the day where the sap is at it sweetest to create the Selection and this year it represented only 3% of the total production. Historically, this level of quality was not seen on the market as it would remain the Family Reserve.”
