Made in collaboration with our friends at Bar Piquette!
Trail Estate Riesling skins and stems were pressed, put to bin and topped up with water. The piquette rested on skins with punch downs for 2 days prior to pressing. An addition of fermented 2023 verjus was added to create acidity. Infused with lemon balm, sage and thyme grown in the Wine Forest at Trail Estate along with mandarin peels for zesty notes and a bit of Baco Noir for colour. Bottled with added juice to create carbonation.
Delicate floral lemon notes balanced with sage and thyme. Perfectly refreshing on its own or in a gin cocktail.
